It's a great time to enjoy fine beer in the US - more varieties and more
flavors are out there, more places are offering fine beer, and all forms
of media are paying attention to the beer revolution: we saw Samuel Smith's
Organic Lager in the Baltimore Sun-Times on Jan. 9; Pinkus and Samuel
Smith were top choices in a tasting of organic beers at sprig.com; Beer magazine ran a nice photo
of Sam Smith's India Ale in their article on IPAs; Stick & Stones Outdoor featured
Sam Smith's Organic Lager as "Drink of the Month," in Dec. '07 .

In other parts of the world, brewers
add laboratory pure strains of brewer's yeast in closed, sanitary systems;
lambic brewers let airborne, natural yeast of multiple strains alight in their
wort and perform the magic transformation into beer. It's unusual and maybe
even amazing: it would be like leaving a glass of milk out on the counter and
getting spontaneous yogurt.
The flavor of a lambic is dry,
complex, tart, and like no other beer. Frequently, lambics have fruit added as
the perfect flavor balance, and the best-selling lambics in America, Lindemans,
are famous for their elegant, sweet Framboise (Raspberry), Pomme (Apple), Peche (Peach), Kriek (Cherry),
and Cassis (Black Currant) lambics. They also produce Cuvée
René, an award-winning and traditional lambic without fruit, blended by hand
and known as gueuze or geuze. Founded in 1811,
the brewery has been family-owned for eight generations.
